Gluten-Free Banana Bread (with Almond Flour)(Dairy-Free!)
Our gluten-free and dairy-free banana bread is a delightful twist on the classic, made with almond flour for a soft, nutty base that is both rich and wholesome. Ingredients:
2-3 mashed bananas
2 eggs
1/2 cup maple syrup
2 cups almond flour
1 tsp baking soda
2 tsp cinnamon
1/4 tsp salt
1 tsp vanilla extract
2 tbsp olive oil
1/2 cup walnuts (chopped) (and a handful to sprinkle on top at the end!)
2 tbsp chia seeds

1. Preheat your oven to 350°F and grease a 9x5-inch loaf pan. Set the pan aside as you prepare the ingredients.
2. In one bowl, whisk together 2 eggs and 1 teaspoon vanilla extract.
3. In another bowl, mix 2 teaspoons cinnamon, 1/4 teaspoon salt, and 1 teaspoon baking soda.
4. In a separate large bowl, combine 2 cups almond flour and 2 tablespoons chia seeds. Add the dry cinnamon, salt, and baking soda mixture into the almond flour and stir to combine.
5. Mash 2 ripe bananas in a bowl until smooth. Add the mashed bananas to the wet mixture of eggs and vanilla.
6. Stir in 2 tablespoons of olive oil and 1/2 cup maple syrup into the banana-egg mixture until fully combined.
7. Gradually add the wet ingredients to the dry almond flour mixture and gently stir until just combined.
8. Fold in 1/2 cup chopped walnuts.
9. Pour the batter into the prepared loaf pan and spread it evenly. Add some walnuts to the top layer of the batter.
10. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
11. Allow the bread to cool in the pan for 10-15 minutes.
