Gluten-Free Oatmeal Raisin Cookies

Ingredients:
• 2 cups rolled oats
• 1 cup almond flour
• 1/2 cup raisins
• 4 tablespoons chia seeds
• 1/2 cup maple syrup
• 1 teaspoon baking soda
• 2 teaspoons cinnamon
• Pinch of salt
• 3 tablespoons olive oil
• 2 teaspoons vanilla extract
• 1 large egg (added for binding)
Instructions:
1. Preheat Oven: Preheat your oven to 350°F
Line a baking sheet with parchment paper.
2. Prepare Dry Ingredients: In a large bowl, combine the rolled oats, almond flour, chia seeds, baking soda, cinnamon, and a pinch of salt. Stir everything together until well mixed.
3. Wet Ingredients: In a separate bowl, whisk together the maple syrup, vanilla extract, egg, and olive oil.

7. Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
